Kladdkaka (Swedish Molten Chocolate Cake)



Do you remember what it was like to be 11 years old? Were you the kind of kid who was always busy with school work and extracurricular activities? Or did you have time to play video games with your siblings (If you had them) all day on the weekends? I don’t remember much about my childhood at this age. I was hit in the head a lot as a child, and because of that most of my adolescence is now a blur. However, after spending this past week with my Aunt and her family in Ludvika, Sweden, I now am beginning to remember what It was like to be a kid.


My Aunts family dynamic is very much like ours was in retrospect. They do all the same things we did like spend hours playing FIFA and racing games and then ride bikes or play soccer outside whenever we’d get bored.


I got to spend time with my little cousins (11,9,&6) for the first time ever on this trip because they’ve never come to America and I’ve never been to Sweden before. There was a lot of screaming, crying, and arguing going on amongst the kids and that in itself began to bring me back to my childhood a bit. I was the older cousin/uncle staying the week in the house. The kids asked about who I was and what I did for a living. When I told them that I cook, they asked me to cook for them and I agreed to make them something with no hesitation.


Towards the end of my stay, I still hadn’t had the opportunity to cook anything, but when the eldest of my little cousins started making a cake I figured that we could do it together and that would be better than me just cooking something for them. I suggested that and he agreed. We began pulling out all the ingredients we needed, setting the oven temperature, and melting the butter. We were following some recipe that my cousin had apparently known off the top of his head and he didn't check for eggs. We checked and didn’t have any and at this time the local grocery store was having a shortage of eggs as well.


I thought of a traditional Swedish cake called Kladdkaka which is like a molten chocolate cake. It can easily be made without eggs and I thought to use a swirl of peanut butter because, who doesn't love the combination Peanut Butter and chocolate?


I think this recipe speaks for itself, and as far as the results, the cake was gone within one hour.

Ingredients:

  • 1&½ Cups of All Purpose Flour

  • 1&¼ Cups of Sugar

  • 120 Grams of Dark chocolate for Baking (melted)

  • ¾ Cup of Melted Butter

  • ¼ Cup of Cocoa Powder

  • 1 Tsp Vanilla Extract

  • ¾ cup of milk

  • Pinch of salt

  • 3-4 Tbsp of Creamy Peanut Butter


Instructions:


  • 1. Preheat the oven to 400°F.

  • 2. Grease a cake pan with butter

  • 3. Melt the butter in a pan and add the chocolate. Mix well until combined.

  • 4. Pour into a large mixing bowl and add your sugar and mix until dissolved.

  • 5. Add vanilla, flour, cocoa powder, milk and salt and whisk well till homogenous.

  • 6. Pour into the greased cake pan and flatten. Then spoon out your peanut butter and create a marbled design with a butter knife or chopstick.

  • 7. Bake in the oven for 25-30 minutes, test with a toothpick for doneness, and when ready, let cool completely before serving.
